There are literally thousands of great vege recipes. We have given you some of our favourites and every week, you can try a new and delicious recipe on your family. You will probably find some of these working into your regular cooking as many are very easy and fast to prepare.
This week's recipe is Pizza dough and sauce.
A great herbed pizza dough and tomato sauce. Everyone likes pizza!
Ingredients
Dough
- 1/3 cup basil leaves, finely chopped
- 1 tsp dried yeast
- 1 tsp sugar
- 1 1/2 cups plain flour
- 1/2 cup warm water
- 1 tsp salt (optional)
- 1 Tbs olive oil
Sauce
- 1 red onion
- 1 clove garlic, crushed
- 1 very ripe tomato, chopped
- 1 Tbs tomato paste
- 1 tbs oregano, finely chopped
Method
Dough - if you have a bread maker, just throw everything in and use the dough setting. Otherwise...
Sift flour and mix with basil, salt, yeast and sugar. Form a ring on the bench and slowly add water, mixing it in as you go. Keep the mix a little dry so it doesn't stick to the bench too much. Knead in all the water and oil and continue kneading for about 5 minutes forming a smooth ball of dough. Flatten the into a pizza shape and leave in a warm place to rise for about 20 minutes.
Sauce
Fry the onion and garlic in a little oil until golden. Add the tomato and simmer for 10 minutes or until thick. Stir in the tomato paste and oregano and cook for another 2-3 minutes. If the tomato is still too hard, add some water and simmer until tomato is soft and sauce is reduced and thick. IMPORTANT - Allow to cool before use or you will kill the yeast too early and the base will not rise.
Then it's just a matter of spreading the sauce over the base and topping with your favourite combination of vegies and cheese. Try some different toppings like artichoke hearts, olives or baby corn spears
Variation
One of my favourite pizzas uses basil pesto in place of the tomato sauce and is then topped with english spinach leaves, pinenuts and fetta cheese.
